Step 1: Preheat and prep
Preheat oven to 400°F (200°C). Lightly grease a baking sheet or round pan with olive oil or cooking spray.
Step 2: Prepare the potatoes
Peel and grate the potatoes using a grater or food processor. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. Remove excess water to ensure crispness.
In a large bowl, toss the grated potatoes with the olive oil, salt, pepper, and garlic powder until evenly coated.
Step 3: Shape the Potato Crust
Spread the grated potatoes evenly over the prepared baking sheet or press them into a round shape to form a flat, even layer (about 0.6 cm thick). Use the back of a spoon or your hands to press the potatoes down firmly.
Drizzle a little more olive oil over the top for extra crispiness.
Step 4: Bake
Bake for 25–30 minutes, or until the edges are golden brown and crispy. Carefully turn the potato crust over with a spatula (if using a baking sheet), or check the underside (if using a frying pan) to make sure it is cooked through and golden.

Step 5: Add the Cheese
Sprinkle the grated cheese evenly over the baked potato crust. Return to oven for 5–7 minutes, or until cheese is melted and bubbly.

Step 6: Garnish and serve

Remove from oven and let cool slightly. Garnish with chopped fresh parsley if desired. Cut into wedges or squares and serve warm.
